I had my first taste of authentic southern style BBQ at my wedding. WOW! I learned the difference
between BBQ and grilling. What a difference between the two! I loved it so much I wanted to learn
more. It just so happened that I became good friends with the gentleman who catered my wedding. I
was fortunate enough to be taught the trade by someone who was taught from an older gentlemen in
the deep south. The right way, slow and low. Using a combination of dry rub, sop, wood for smoking
and temperature produces the best meat you'll ever have. Taste, texture, tenderness, juicy and looks.

I found my calling. So I built my rig (with help from my friends), created my own recipes, and watch
people's expressions as they enjoy my food.  I'm from the old school where word of mouth is the best
advertisement. Do what you say and say what you do. It keeps me extremely busy every year and
brings people back for more.  People have been telling me I need to start my own website. That the
Internet is the way to go. So here we are, giving it a try. Hopefully I'll hear from you and get the
opportunity to earn your business.

We offer on site catering for all occasions. I have a 30 foot long mobile rig equipped with a 1 ton
smoker and an 8X10 kitchen. The rig is brought right to your event. It's one of the largest smokers in
New Jersey, Pennsylvania and New York. Many have claimed, my food is not just great tasting, it's an
experience.

The meats are smoked southern style, made with northern pride. You'll see a smoke ring in the meat.   
First the meats are rubbed with my own recipe of dry rub. Then I sop the meat every hour. All of my
sop and sauces are my own recipes.

You can choose 2 appetizers, 2 salads and 3 meats (excludes whole pig for pig roast); or you could
choose to order trays of meats and salads. Then again, maybe you want a pig roast. How about a
stuffed pig?! I can smoke 6 90lb pigs at once! Every pig that's come out of the smoker is what they
would call a "competition" pig. Beautiful bronze cherry color, tender and juicy.  You have the option of a
 stuffed pig, too. Stuffed with sausages, a variety of vegetables, my famous sauce and spices.  About
an hour before the pig is done, I'll take out the sausage and brown it in the oven. Once the sausage is
browned, they get sliced up, I add  fresh vegetables and my secret sauce. Mmmmmmm, good! Tastes
like more!
